On Tuesday, next week, it is Mr’s birthday. I asked what he wanted for dinner. We’re not exactly partying hard, but a nice dinner is doable.
He says enchiladas.
Never made those before. Nope.
I’ve made tortillas, tacos and other such mexican dishes, but never these.
They don’t seem too complicated. Basically corn tortilla, with chilli mince and a chilli, cheesy sauce.
Something like this…
This could get interesting, what with one beef eater in the family (His Nibbs), three that prefer veggie mince, one that wont eat anything of this sort and another that cannot have tomato or chilli.
